Here's to a happy healthy nutritious eating!

Choccy bites - Recipe

Ingredients

  • 7 dried pitted dates chopped into small pieces
  • 2 tbsp of mixed nuts (or one type of nut if you prefer)
  • 1 tbsp of raw cacao powder
  • 1 tsp of maca powder
  • 1 tsp of quality smooth peanut butter
  • 2/3rd of a pack of 100g quality dark chocolate at least 70% cocoa

Method
1) Mix all the ingredients (except the dark choc) in a bowl
2) Melt the dark chocolate in a glass dish over hot pan of water
3) Put the mix into the melted dark chocolate and stir
4) Put the spoonful bite size pieces onto a greaseproof paper on a flat dish
5) Chill in fridge so dark choc hardens

ENJOY!

Notes: Try to use quality at least 70% cocoa dark chocolate so there is less sugar. Look at the ingredients, if it lists sugar first, then its majority sugar, as ingredients are listed in order of largest quantity first. For peanut butter - I use Pip & Nut, as its pure peanuts, no added sugar and no palm oil. The dates are sweet enough so you don't need any sugar here.

Some savoury recipes

Steamed salmon
Steamed sweet potatoes chopped into cubes
Blanched spinach in some cream
Seasoning - garlic, salt and pepper

No fuss, quick, easy and nutritious...

Boiled brown rice (soak brown rice in hot water for a few hours beforehand for quicker cooking time)
Cube tofu ( I use Tofoo) and fry in a little olive oil with peppers chopped mango
Add some garlic, turmeric, curry powder and vegetable stock.
Add watercress

Turned out to be quite a tasty combo...

Coconut noodles

1) Boil egg noodles (or whole wheat), leaving aside in a serving bowl.
2) Steam broccoli and leave aside on top of the noodles.
2) Make sauce - fry mushrooms, chopped garlic, ginger in some oil, add half tbsp coconut flour, some milk of choice, stock powder, turmeric, creamed coconut (from block), chilli powder, black pepper, add some boiled water
3) Pour soup onto noodles and broccoli.

Simple, quick and so tasty...
